My whole life I have adored a lemon poppy seed cake.
I was never able to duplicate my Moms lemon poppy seed chiffon cake:(
This one is not a chiffon but it is so delicious!
I made it for some friends and used a rosette bundt pan.
My mouth is watering just thinking about it!!

It did though:) And it held together!

Valentines Day Cookies
I decided to take a few last minute cookie orders for Valentines Day. I understand “last minute” – I do a lot of things that way!

I was also contacted to make up some flower cupcake toppers for a baby shower. They turned out great!

My Husband turns 42!
In the New Year my Husband, Deven, decided that he was no,longer going to eat wheat or dairy. He has been doing some reading on how these products can effect asthma, and being an asthmatic he though he would give it a go!
So – when it came to what to make him for a birthday cake I was a little unsure of what to do. Baking without dairy is a no brainer! Super easy! But I have not had the best track record with gluten free baking. Admittedly, I have not really ever put 100% into it but I have never had much of a reason to. Surprisingly it was much easier then I thought it would be.
I made a toasted almond, orange and coconut cake. It was delicious, moist and much enjoyed!

A Lions Birthday cake?
It may look like a tasty cake for a lion but this cake was done at the request of a 7 year old girl:)
With Leopard print, Zebra stripes and Peacock feathers any Lion would be more then happy to dive into this one.
I hope Callista was just as thrilled!

“Peanut” Cake
This was not the cake I had in mind when asked to do a “peanut” cake for a birthday.
I was picturing what you are all most likely picturing…. a cake that looks like a peanut.

Apparently this is a character from the mind of a guy names Jeff Dunham.
The cake was fun to make and the client was very happy with the outcome – even though I had to Google it:)
My Momma turns 53!
My Mom asked me to make her birthday cake for her this year.
Now usually and traditionally my Mom makes cake for EVERYONE and the cake she always makes is her famous chocolate oat cake.
It is delicious!
Always moist, lusciously dense, and loved by everyone who tries it. When she asked me to make it for her I told her that we should try something new.
We always have chocolate oat cake…. this year I wanted her to branch out a bit.
So – I gave her 2 options… an orange cake with a dark chocolate truffle icing OR an Italian caramel coconut cake.
She chose the later.
OH MY!
This cake was SO rich and SO sweet. Finishing one piece was a chore!!
It was very good but I doubt I will make it again just due to the sweetness factor.
The cake was the centre of much laughter that night.
Maybe next year I will stick with the chocolate oat cake:)
